Pumpkin Protein Muffins

several cinnamon-colored, pumpkin protein muffins in bowel with white towel next to pumpkin puree and vanilla whey proteinThese Pumpkin Protein Muffins are a great little snack or carbohydrate option for your breakfast!  If you are looking for a super sweet muffin you may want to add some additional stevia, but I was trying to go for the least amount possible
Dry Ingredients:
  • 2 cups     Oat Flour
  • 2 scoops CardioWhey Vanilla Protein Powder
  • 1 tsp.       Baking soda
  • 1 tsp.       Baking powder
  • ½ tsp.     Salt
  • 2 tsp.       Pumpkin pie spice
  • 1 tsp.       Cinnamon
  • ½ cup     Stevia
Wet Ingredients:
  • 3    Egg Whites
  • ½ cup    Unsweetened Vanilla Almond Milk
  • 2 tsp.      Vanilla Extract
  • 4 oz.       Unsweetened Applesauce
  • 15 oz.     Pumpkin Puree, canned
Directions:
  • Preheat oven to 350 degrees and spray 2 muffin tins.
  • Mix wet ingredients and dry ingredients in separate bowls.
  • Combine wet and dry ingredients until mixed well. Evenly disperse mixture into 22 muffin spots.
  • Bake in oven for 25-30 minutes checking muffins using a toothpick. Once toothpick comes out clean, pull from oven.  Let cool before serving.
