These Pumpkin Protein Muffins are a great little snack or carbohydrate option for your breakfast! If you are looking for a super sweet muffin you may want to add some additional stevia, but I was trying to go for the least amount possible
Dry Ingredients:

2 cups Oat Flour

2 scoops CardioWhey Vanilla Protein Powder

1 tsp. Baking soda

1 tsp. Baking powder

½ tsp. Salt

2 tsp. Pumpkin pie spice

1 tsp. Cinnamon

½ cup Stevia
Wet Ingredients:

3 Egg Whites
-
½ cup Unsweetened Vanilla Almond Milk

2 tsp. Vanilla Extract
-
4 oz. Unsweetened Applesauce

15 oz. Pumpkin Puree, canned
Directions:

Preheat oven to 350 degrees and spray 2 muffin tins.

Mix wet ingredients and dry ingredients in separate bowls.

Combine wet and dry ingredients until mixed well. Evenly disperse mixture into 22 muffin spots.

Bake in oven for 25-30 minutes checking muffins using a toothpick. Once toothpick comes out clean, pull from oven. Let cool before serving.
