Prosciutto Breakfast Cups

Prosciutto Breakfast CupsAre you looking for a nutritious, delicious, and fun breakfast to make? The Prosciutto Breakfast Cups encompass all of those things. The eggs are a great way to get your source of protein while the broccoli and tomatoes are filled with vitamins, minerals, and antioxidants to support your overall health.
This dish is easy to make and doesn’t require too many steps. Since the prosciutto is already very savory, salt is not needed for this dish.
  • - Olive oil
  • - 6 prosciutto slices
  • - 6 eggs
  • - 1/2 cup small broccoli heads
  • - 3 cherry tomatoes
  • - Salt and pepper (optional)
Turn on the oven for 375 degrees F. Use a 6-12 cup muffin pan. Place a prosciutto slice in each cup, making sure it covers the bottom and sides. Then, crack an egg in each cup. Place the pan in the oven and let it bake for 20 minutes. While that’s baking, boil water in a small pan. Once the water starts to boil, add 1/2 cup of small broccoli heads. Let it boil for 2 minutes. After the prosciutto baked egg cups are taken out of the oven, place a small broccoli head and half a cherry tomato on each one. Then, you can enjoy this delicious breakfast!
